When I'm not working on a video, or running outside, or playing with my favorite worker bee, I do enjoy being in the kitchen. I'm not a serious chef or experienced baker, but I like to try. I thought I'd share some of my favorite recipes on The Hive since they're all tried and true.
This first one is for a snack that in my household we call, "Energy Balls." The name could use some work, but the recipe is perfect. I haven't met one person who didn't like them (unless they have a peanut allergy, then they should stay away).
They are sweet but healthy, small but surprisingly filling and like the name suggests, provide you with quick energy/nourishment when you're on the go.
Here's what you'll need:
- 1 cup oatmeal
- ½ cup peanut butter (or other nut butter)
- ⅓ cup honey
- 1 cup coconut flakes
- ½ cup ground flaxseed
- ½ cup mini chocolate chips
- 1 tsp vanilla
And how to make them is even easier:
- Mix all ingredients together
- Chill in fridge for 30 minutes
- Roll into Balls
- Store balls in the refrigerator
I am not the creator of this recipe (here's the source) but I have experimented with adding in other ingredients (dried fruits, butterscotch chips, other nuts, etc.) and I've left out the flaxseeds and chocolate chips before. You really can't go wrong here. Trust me and try them today! I bet they don't last in your fridge for a week!
